So now we move from ten toed chickens to ten hour chicken…
I used one of my home raised meat chickens to make a new recipe out of Gwyneth Paltrow’s new cookbook, “My Father’s Daughter.” Ok, ok, I know a lot of you are like, what does Gwyneth know about cooking? But apparently she knows her way around the kitchen, and I really like this cookbook, particularly as a mother of young kids. It is full of recipes that are great for young families.
Ten hour chicken could not be easier or more delicious. You put a chicken, breast side down, in a dutch oven with a tight fitting lid. Squeeze a lemon onto the chicken, sprinkle liberally with salt and pepper, and throw a few whole, peeled cloves of garlic around the pot. Put the lid on and put the whole thing in a 200 degree oven for 10 hours. No that is not a typo.
Ten hours later you take off the lid to find 4 inches of yummy juices, which I made into delicious gravy, and a chicken that is falling off the bone tender. You can buy Gwyneth’s cookbook on Amazon.com and it was at Costco last time I was there.
