I hope that you all had a great Thanksgiving! We certainly did. Here is the star of the show, Mr. Tom Turkey, who graced our Thanksgiving table and was absolutely delicious. The flavor of a home grown heritage breed turkey is amazing. Our Tom was a Narangansett and Pygmy White cross. I also raised Bourbon Reds.
It’s interesting that turkeys raised outside on pasture have a layer of fat under the skin on the breast. This ensures that you don’t have dry breast meat on your Thanksgiving turkey. Tonight we will enjoy the last iteration, turkey soup. My phone was ringing off the hook in the week before Thanksgiving–people looking for a heritage breed bird. Alas, my stock was sold out. I will raise more next year to try and share this special treat with a wider audience.
